Happy Easter! Chocolate Hot Cross Buns!

Happy Easter!

This year I decided I would actually make hot cross buns! Yeah! I know! Ballsy move for a level 1 baker! I did actually have the recipe last year from Tesco but time got away from me and it was too late to do them when I eventually had time to do them! So this year I've made a point to get my ass into the kitchen and MAKE THEM! Its a simple recipe, well it sounds it anyway! I've popped it down below if you fancy making yourselves any! 

My hot cross buns didn't really have much of a "cross" to them in the end, but I don't really care because they tasted bloody brill! Everyone else must have thought so too as they didn't last long!

The Recipe! :

525g Strong White Bread Flour - extra to dust them later!

1 heap tsp Mixed Spice

55g Caster Sugar - 1/2 a tbsp for later

45g Dried Milk Powder

7g Dried Yeast

55g Butter melted, then slightly cooled

1 Egg beaten

2 tbsp. Plain Flour

Then pick something you want in your hot cross buns! I opted for chocolate chips because not many people in my family like hot cross buns with raisins etc

The Method!

(Make sure you have a few hours spare because there's a lot of waiting involved.):

Mix the Bread Flour, Mixed Spice, Sugar, Milk Powder and Yeast into a bowl.

Make a well in the middle of the bowl.

Lighlty beat the butter, egg and 250ml of lukewarm water and then pour into the well slowly until a soft dough forms!

Turn the dough out onto a floured surface, then knead for 8-10 minutes until smooth and elastic.

Return the dough to the bowl and cover over with a damp cloth, leave it to rise for 1 -1 1/2 hours until the dough has doubled in size!

Once the dough has risen, you need to knock back the dough by punching it lightly.

Cut the dough into 4.

Grab your filling for the buns and knead the filling into each quarter.

Cut each quarter into 3 to make 12 hefty buns / cut into 4 to make 16 smaller ones

Shape all 12/16 into balls and transfer them onto a greased baking sheet

Cover with a damp cloth and leave them for 30-40 minutes

Pre-heat the oven to gas 7, 220, fan 200

For the topping mix the Plain Flour, 1/2 tbsp. Sugar and 2-3 tbsp. water to create a smooth thick paste.

Spoon the mixture into a piping bag with a small plain nozzle.

Mark a cross on each bun with the back of a knife then pipe the paste on top! 

Reduce the oven to gas 6, 200, fan 180. 

Bake for 15-18 minutes until golden. 

Then leave to cool!
